Cookie dough popsicles

When David was a baby I used to make Cookie Dough Popsicles all the time. We would eat lunch together and then for dessert we would share one. It’s a sweet memory of that time, when he was little and an only child.

That was six years ago, and lunches are a lot different now. Now there are four kids and lunches are wild, but the biggest difference is that David would never share his popsicle, no way, no how.

This is one of my all-time favorite popsicle recipes because it really truly does taste like cookie dough in popsicle form. I made it last weekend for the first time in years, and it’s just as great now as it was back when David ate vegetables at each meal and would share his popsicle with his mama.

Step one:  gather all the ingredients.

When I made these I realized that popsicles are a great thing to “cook” with kids because there isn’t any actual cooking, and the measurements don’t have to be precise.

And there’s a lot of stirring. So much stirring. And no danger of over-stirring.

There is danger of stank face when you 1) request that your daughter wear her hair back because her curls keep falling in the milk 2) cheerfully suggest that she count out the morsels because there is nothing more fun to count than chocolate. That’s a well-studied fact.

The hardest part is waiting for them to freeze.

Second hardest part is taking all your kids outside and making them sit on a blanket in front of a lilac bush and smile all natural like. But even that’s no biggie, because there are popsicles involved.


Cookie Dough Popsicles

Ingredients

2 1/2 cups milk (soy or almond milk works fine)
1/2 cup brown sugar
1/2 tsp salt
2 tsp vanilla
mini chocolate morsels

Directions

  1. Microwave milk for 1 minute (or heat on the stovetop over medium low heat) until warm (but not boiling).
  2. Add brown sugar and salt and stir until completely dissolved. Stir in vanilla.
  3. Pour milk mixture into popsicle molds, then drop ten or so morsels into each mold.
  4. If you’d like morsels throughout the popsicles, fill the mold just 1/4 full, add morsels and freeze. Once frozen (after about an hour), add more morsels and more of the milk mixture, and continue doing so until they’re completely full and there are morsels throughout the pops.
